13-Cut “Spread Loose” San-Zi Method

Repeat the 6-cut simple method’s first step (see step 1 for reference).
Make 12 such cuts, and on the thirteenth cut, cut all the way through to remove the end piece (step 2).
Unfold the piece, flip it over, and pull to stretch the strands slightly (step 3).
Take one thick corner and fold it diagonally over to meet the other diagonally opposite corner and press into each other (step 4).
With the dough still on the counter, use your thumb and index finger to “turn” one corner toward the overlapping corners, and then press that corner onto the top of the overlapping corners (step 5). Repeat with the other corner (step 6).
