There are so many hundreds of different types of fish in the sea, and most of them are edible. Catch or buy one and someone somewhere will have a recipe for it. It would take a much bigger book than this to include even one recipe from every single fish, so I have not tried. What I have done, however, is to include recipes for the fish I use most frequently and the fish that are readily available to most people. If I have been unable to get a particular fish (which has often been the case), then there is no recipe for it. Having said that, however, all fish are so versatile, especially those from the sea, that a recipe that suits one fish will definitely suit at least two other types of fish – so experiment! Where a recipe calls for Dover sole, try using witch or lemon sole instead. Is sea bass not available, or even too expensive? Well, try using haddock. The sea holds a wealth of food still not appreciated as much perhaps as it ought.
