In this section, I have included all those dishes that do not easily fall under a heading for a particular fish, where there are three or more different fish involved. Most types of fish will complement each other very well, so there really is immense scope for invention here. The combination of a few different fish, each with their own characteristics, can bring a variety of colour, flavour and textures to the palate and the eye. Try mixing different shellfish together, or shellfish and seawater fish, or seawater and freshwater fish. Whether it is for a first course or a main course, for lunch or for dinner, the permutations must be endless. Go on, have fun, create some dishes!
