Only the tentacles can be eaten unless you are fortunate enough to find baby octopi. Ask your fishmonger to order the fish for you and prepare it. Simmer the tentacles whole in salted water for 45 minutes or until as nearly tender as they ever get. Drain and allow to cool a little, then slice into bite-sized pieces and dress as for the squid. Well worth the effort. Serve at room temperature.
