No. Arborio is the easiest rice to find. Vialone and carnaroli are other Italian types and have their adherents. Venetians favour vialone but their Risotto Nero is considered best made with carnaroli. Do not attempt to use pudding, patna or Japanese rice, despite their similar appearance to Italian rice.
