This vegetable is very popular on the European continent. It is an excellent root vegetable. The name Vegetable Oyster or Oyster Plant was given to it many years ago when it must have had a flavour somewhat resembling oysters. It does not possess that flavour today.
The young leaves of salsify may be used in salads.
Salsify is seasonable from December to March.
