For all salads containing sliced tomatoes, the tomatoes should be skinned first. The removal of the pips from the tomatoes is a matter for personal choice.
To skin tomatoes
There are three methods of skinning tomatoes. The 1st and 2nd methods listed below are excellent where only a few tomatoes have to be skinned. The 3rd method is preferable where a large number of tomatoes have to be skinned.
1. Rub the surface of the tomatoes firmly with the back of a knife. Slit and remove the skin.
2. Impale the tomato on a fork and hold over a low gas flame, turning it in the flame until the skin wrinkles and splits. (A gas taper may be used instead of the gas burner.) Remove the skin and cool the tomato.
