Food Value: Eggs are rich in protein, including the ten amino acids considered indispensable for growth and tissue repair; they contain Vitamins A, B, D and E, as well as the minerals iron and calcium.

Buying and Keeping Eggs: In buying eggs, avoid those that have been kept for days in sunny shop windows: glass attracts heat, and heat is bad for eggs. Avoid, too, buying dirty eggs: an eggshell is porous and dirt and germs are quickly absorbed. For the same reason, do not keep eggs next to onions, cheese, fish or other strong-smelling foods.
