What should I answer when asked what kind of cooking I do? I am English, albeit of a very mixed ancestry (Irish, French, Polish Jew, English in the ancestry), but I was trained by the French. I go to Italy every year and cook Italian more often than not at home. Time spent in Hong Kong has given me a taste for Cantonese food. I love the strong, simple flavours of the English food of my childhood. I am, in short, confused. I am labelled ‘modern British’ but that means little. ‘Modern European’ is slightly more accurate, but the fact is that I am a sort of fusion.
