I‘ve been hearing about this lovechild of Mr David Loftus for a number of years now and it’s a complete pleasure not only to write this foreword, but to contribute recipes alongside all of these other incredible chefs. Every one of their contributions is a testament to David, who, if you think about it, probably knows a lot more about what’s going on in food trends and publishing than most people. Because that’s what he does. He works for anyone doing quality work and he travels to many, many countries to do it. A week can take him from east London to Jamaica to Chelsea to Paris and somehow he’s made that work alongside being a wonderful father and husband, and a jolly good friend.
