The famous grey stone ‘PIETRA SERENA’ from which half the buildings in Florence are constructed, comes from the quarries near Fiesole, le Cave di Maiano. The trattoria of the same name is no longer the haven for workers from the nearby quarries that it once was. A more international crowd comes now for the stunning views of cypresses and villas in the Fiesolan hills, rather than for their essential evening meal. But there are still some very good traditional dishes to be found on the menu if you know your traditions and are willing (and able) to ask about them.
