Giovanni Cappelli, the owner of the Fattoria di Montagliari, an excellent trattoria & vineyard near Panzano, is a faithful patron of the Antica Macelleria in Greve. His cook specializes in local Chiantigiana cuisine and Signor Cappelli himself is quite a culinary expert. These recipes are from his own handwritten collection. The Fattoria di Montagliari also has one of the largest vin santeries in Tuscany and produces one of the best vin santos. The Riserva 1968 is particularly fine.
