When I shop for fish I often do so without a specific recipe or even a specific fish in mind. That way I can make quality and freshness my priority and I simply buy what looks best to me that day. With that in mind, I offer several tasty and versatile marinades and sauces that will work beautifully for a variety of fish fillets. Many can be easily assembled from basic ingredients in your larder. Some of the recipes call for a specific cooking technique, while others leave the choice up to you. To help you here, I am also including basic instructions for baking, grilling or broiling, and poaching any 6-ounce fish fillet.
