Sandwich Cookies

Though any disk- or finger-shaped cookie may be made into a sandwich, the following recipes are for rich nut cookies with delicate fillings. Two rules apply to making perfect sandwich cookies:

• Be sure to make the cookies a uniform size, or they look unattractive when sandwiched.
• Don’t overdo the filling—the cookies need only enough to hold them together.
