It seems that the more we know and the more elevated food has become in our culture, the more confused and uncertain we’ve become about what to eat and how to be healthy. In our experience, direction about what to eat comes primarily through five different perspectives: health and nutrition professionals, weight-loss diet advocates, environmental and economic sustainability concerns, popular food fads (think cronuts), and lifestyle diet advocates. The common approach of food producers to these ever-changing interests is to go with the flow and reap the profit that can be had. Reduce the flour and make low carb. Reduce the fat and make low fat.
