At its core this is a cookbook, just as the Bakehouse at its core is an artisan bakery. In all of our recipes we use traditional methods, which require attention to detail, dedication to process, and full-flavored ingredients. We selected only recipes that are particular favorites of ours or of our customers, and ones we think are interesting either in method, ingredient choice, or historical background.
The recipes have a range of difficulty, from easy to medium to day-long projects. We are sharing with you the exact recipes we use or teach at our school, scaled for home bakers. We include our secrets, which are really just knowledge gained after years of thoughtful work (and correcting mistakes). Don’t be alarmed by the length of some of the recipes. “Don’t freak out!” as we say at the bakery on unusually hectic days. You can do them!
