Appendix 5: My Short List

There are many quality bakers, any list I compiled would surely overlook as many as I included. Instead, I offer a list of colleagues who’ve opened their bakeries and milling operations to me and shared inspiring and treasured conversations about our craft. I’m especially inspired by the consistent quality of the breads that fill their shelves, delivery trucks, or farmers’ market stands.
