If you discover Surface Mold on your culture, use a damp paper towel to wipe away as much as possible from the inside wall of the container. Discard the towel and wash your hands.

Run a teaspoon under cool water and spoon off and discard an inch or more from the top of the Culture to reveal the clean, light tan mixture below. Scoop out a half cup or so of this clean Culture and transfer it to another container.

Compost the rest of the Culture. Clean and sanitize the original container. Flush it well with clear water and return the reserved Culture to it.
