Transfer the Levain mixture to the fermentation container

Use a plastic scraper. Dip it first in water and use one sweep to catch as much of the Levain as you can manage.
Use your fingers dipped in water to get the Levain into the plastic container.
Make a final sweep through the workbowl for the remaining Levain and wipe the scraper over the rim of the plastic container.
