A Sourdough Porridge Bread is made by layering a fermenting dough, like the Pain au Levain dough, with a cooked and seasoned grain called a porridge. To visualize the process, think of a pastry dough such as Croissant or Puff Pastry.

To make a laminated dough, as these pastry doughs are called, a baker needs two preparations. On one hand there’s a mass of dough which may be yeasted or not. Croissant yes, Puff Pastry no. On the other hand, there’s a high baker’s percent of fat, the frequent choice being Butter.
