BREAD IS UNIVERSAL. No matter where you go in the world, you’ll find it in some form. It’s the most common, as well as the most diverse, baked product available today. Cultures vary greatly with regard to taste and the amount of time available for baking; furthermore, different climates produce different strains of wheat and other grains. Because of these differences and others, radically diverse forms of bread have emerged from various cultures. How fortunate we are today to have the perspective of history, not to mention convenient methods for sharing information, so that we have access to so many types of bread.
