COOKIES ARE TRULY INTERNATIONAL, not to mention popular. In fact, every country has so many varieties that it was difficult to choose among the thousands of recipes available.
Dozens of countries have bar cookies, drop cookies, rolled and cut cookies, hand-molded and filled cookies, piped cookies, and sandwich cookies. Each type of cookie has its merits. As always, my first concern in collecting these recipes was to find those that are both delicious and easy to prepare, but I have also favored cookies that keep well. As a result, many of the recipes included in this chapter are for cookies that are as good when they are a week old as when they are fresh from the oven.
