CAKES MEAN ONE THING: CELEBRATION. That doesn’t mean they have to be fancy, however. The occasion being marked can be as simple as inviting a friend for coffee or tea, although cakes are traditionally served for more significant events, such as birthdays and anniversaries. The cakes in this chapter cover a wide range of types. Some—which I like to call “mix-bake-eat” cakes—are very simple and need no further adornment after they are baked. Others call for application of a dressy glaze, but are also fairly quick and easy to prepare.
