A Thickener is any ingredient that is capable of gelling, stabilizing, or thickening. The list of thickeners used in the bakeshop includes gelatin, pectin, plant gums such as agar-agar, and starches. (For an explanation of how starches, gelatin, pectin, and gums thicken liquids, see “Thickeners” in Chapter 4.)
