The overpiping technique is mostly seen in England, and is their most-used piping discipline. When a cake is decorated with the overpiping technique, it creates a shadowing effect and gives the piping height because it is stacked. This is an elegant approach for most cakes. Because the piping has eye appeal, it’s striking for merchandising displays.
There are many borders that can be overpiped. Whatever border you identify, be sure to make the first layer of piping as straight as possible. Once you have established a solid first line, the rest of the lines that you will be stacking should be straight.
