Everyone who visits Barbuto eats their salad. I am most happy about this! New York is such a fantastic source of all things salad-like, it makes it wonderfully easy to serve great stuff. In recent years, the greens available at the farmers market have tripled. In years past endive, trevisano, gem lettuces, and so on were imported. Now the local farmers have really upped their game. And we are the happy beneficiaries. The number of varieties is astounding. But a salad is not all lettuce.
I think the salad course is really the happiest part of the meal for me. I know that if the greens are delicious, the olive oil good, then the world spins a little more evenly.
