Fábrica de Conservas La Gondola was founded in the 1940s by Italians who introduced one of the first canning industries exclusively dedicated to the conserving of fish using salt to Matosinhos.
La Gondola cans are made using the traditional pre-cooked method, with production dependant on fish caught at the right time of year, in the best conditions of quality and flavour, and with preference given to fish from Portuguese trawlers.
La Gondola’s Millésimés sardines in olive oil are produced using sardines selected by hand, carefully arranged and cooked in steam. Without the use of any machinery, sardines are placed one by one in cans and high quality olive oil is added. Just like a good wine, these cans get better with time and reach their point of excellence years later – this being why the year of the fish’s catch is written on the packaging.
