Twisted Classics

Though I have nearly three decades of professional cooking under my belt, I still have a place in my heart (or, you could say, my plate) for classic Italian dishes. There’s a reason lasagna, carbonara and arancini are popular all over the world today. For many, these dishes are the definition of comfort food: simple, tasty, and a delight whenever they are served. However, through my lifetime of cooking, I have drifted into what I call “twisted classics” – favourites with a hint of something unique and unexpected.
