There’s something about dessert that brings out the traditionalist in me. I can’t explain why, but I love classic desserts with bold flavours and tested pairings. If the thought of tiramisù, gelato and panna cotta is making your mouth water, you’re in the right place. Although these desserts have been tried and tested for many generations, there are variations that not everyone is aware of.
Think of almond brittle paired with cinnamon and a fresh, creamy ricotta mousse; crème brûlée infused with saffron and served with ice cream; gelato made with Grana Padano and laced with caramelised figs and walnuts. These sweets are stuffed with nostalgia and infused with the unexpected.
