Stand the bread machine on a firm, level, heat-resistant surface. Place away from any heat source, such as a stove or direct sunlight, and also in a draught-free area, as these factors can affect the temperature inside the machine. Do not plug the bread machine into the power socket at this stage. Open the lid. Remove the bread pan by holding both sides of the handle and pulling upwards or twisting slightly, depending on the design of your particular model.
Make sure the kneading blade and shaft are free of any breadcrumbs. Fit the kneading blade on the shaft in the base of the bread pan. The blade will only fit in one position, as the hole in the blade and the outside of the shaft are D-shaped. Some machines are fixed blade only.
Pour the water, milk and/or other liquids into the bread pan, unless the instructions for your particular machine require you to add the dry ingredients first. If so, reverse the order in which you add the liquid and dry ingredients, putting the yeast in the bread pan first.
Sprinkle over the flour, ensuring that it covers the liquid completely. Add any other dry ingredients specified in the recipe, such as dried milk powder. Add the salt, sugar or honey and butter or oil, placing them in separate corners so they do not come into contact with each other.
Make a small indent in the centre of the flour (but not down as far as the liquid) with the tip of your finger and add the yeast. If your indent reached the liquid below the dry ingredients, then the yeast would become wet and would be activated too quickly. Wipe away any spillages from the outside of the bread pan.
Place the pan inside the machine, fitting it firmly in place. Depending on the model of your machine, the pan may have a designated front and back, or clips on the outer edge which need to engage in the machine to hold the bread pan in position. Fold the handle down and close the lid. Plug into the socket and switch on the power.
Select the programme you require, followed by crust colour and size. Press Start.
Towards the end of the kneading process the machine will beep to alert you to add any additional ingredients. Open the lid, add the ingredients, and close the lid. If you have an automatic dispenser, add ingredients to this before starting the machine; it will add them at the correct time. Ingredients that may melt or stick should be added manually as described above. Check with your instructions.
At the end of the cycle, the machine will beep once more to let you know that either the dough is ready or the bread is cooked. Press Stop. Open the lid of the machine. If you are removing baked bread, remember to use oven gloves to lift out the bread pan, as it will be extremely hot. Avoid leaning over and looking into the bread machine when you open the lid, as the air escaping from the machine will be very hot and could cause you discomfort.
Still using oven gloves, turn the pan upside down and shake it several times to release the bread. If necessary, tap the base of the pan on a heatproof board.
If the kneading blade for your bread machine is not of the fixed type, and comes out inside the bread, use a heat-resistant utensil to remove it, such as a wooden spatula. It will come out easily.
Place the bread on a wire rack to cool. Unplug the bread machine and leave to cool before using it again. A machine which is too hot will not make a successful loaf, and many will not operate if they are too hot for this reason. Refer to the manufacturer’s manual for guidance. Wash the pan and kneading blade and wipe down the machine. All parts of the machine must be cool and dry before you store it.
