A bread machine should always bake a perfect loaf of bread, but it is important to remember that it is just a machine and cannot think for itself. It is essential that you measure the ingredients carefully and add them to the bread pan in the order specified by the manufacturer of your machine. Ingredients should be at room temperature, so take them out of the refrigerator in good time, unless your machine has a preheat cycle.
Check the dough during the kneading cycles; if your machine does not have a window, open the lid and look into the bread pan. The dough should be slightly tacky to the touch. If it is very soft add a little more flour; if the dough feels very firm and dry add a little more liquid. It is also worth checking the dough towards the end of the rising period. On particularly warm days your bread may rise too high. If this happens it may rise over the bread pan and begin to travel down the outside during the first few minutes of baking. If your bread looks ready for baking before the baking cycle is due to begin, you have two options. You can either override and cancel the programme, then re-programme using a bake or bake only cycle, or you can try pricking the top of the loaf with a cocktail stick to deflate it slightly and let the programme continue.
