Both machine-baked breads and hand-shaped loaves benefit from a glaze to give that final finishing touch. Glazes may be used before baking, or during the early stages of baking to give a more golden crust or to change the texture of the crust. This is particularly noticeable with hand-shaped breads but good results may also be obtained with machine-baked loaves. Glazes may also be applied after baking to give flavour and a glossy finish. Another important role for glazes is to act as an adhesive, to help any topping applied to the loaf stick to the surface of the dough.
