Fermentation is simple: it’s a process of turning a carbohydrate, such as sugar, into an acid or – in our case – alcohol and carbon dioxide. The latter is allowed to escape while the alcohol remains in the liquid. In wine making this boozy process is activated by adding yeast to a sugary liquid – the more sugar is used, the stronger the resulting alcoholic drink. From there it’s down to your choice of edible ingredient to provide the flavour.

In this section we have also included a few mead recipes – these are ancient beverages that simply use honey as a source of sugar. As the honey contributes its own flavour, other ingredients are used to complement the honey notes rather than be a dominating presence.
