You can use any apples to make cider – it really depends on what is available to you, and your personal taste. Chances are, the majority of your fruit will be dessert or culinary apples scrounged (or scrumped) from back-garden trees in your local area. A juice blend of these types of apple will give you an ‘Eastern Counties’ or German-style cider that will have clean, sharp characteristics. If you are lucky enough to have access to cider apples, and if all goes to plan, you will be able to produce a richer, fuller, tannin-rich cider known in the UK as ‘West Country’ style.
