During the initial stages of fermentation, when the yeast cells are busy multiplying, the juice will benefit from exposure to air. This will help the yeast grow strong cell walls, so plug the fermenter with a cotton wool ball to allow air in but prevent any airborne contamination. As the initial frothing subsides, replace the cotton wool plug with an airlock.
