Throughout this book we’ve been keen to emphasize that quantities often don’t need to be exact, and nowhere does that ring truer than in this chapter. If you’re not certain you can get your hands on one particular ingredient, try substituting it with something similar. Several of these recipes have been arrived at by us not having quite the same ingredients to hand as our continental chums – so it’s up to you to experiment and make your own unique recipes, using ours as a guide.
