Most of our recipes include the addition of sugar to raise the alcohol level in fermented/brewed drinks or to sweeten liqueurs and cocktails. Specialist brewing sugars are available, but we’ve always found white cane sugar works just fine. Darker sugars can also be used to add a different flavour to your drinks (and are specified in individual recipes), while other sweet ingredients, such as honey or maple syrup, can also be used in some recipes.
