White bread has taken its fair share of knocks during the rage for whole grains. Most people who eat only whole-grain breads have developed a particular type of disdain, manifest in accompanying facial expressions, whenever they discuss white bread. It is not that the nutritionally empty and tasteless “spit-wad” bread does not deserve scorn. The effort it took to launch a new awareness of the value of whole-grain bread was monumental. A complete reversal of attitude has been accomplished during the past two decades.
