I developed a distaste for herbed breads through overexposure to them. For years, the Brother Juniper’s restaurants throughout the country based their sandwich menus on a predominantly dill-flavored herbed bread. I finally got tired if it and vowed never to eat herbed bread again.
But then I saw the word “Oreganato” on the window of a bakery in Manayunk, Pennsylvania (a section of Philadelphia). The bakery was closed. I never did get to try that Oreganato but the word kept coming back to me until I decided to create my own Oreganato in an attempt to exorcise my irrational dislike of herbed breads.
