One of the leading excuses for eating animal products is the mere convenience of it. I get it. The idea of preparing something with only plants can seem intimidating and time consuming; grabbing a quick burger sounds much easier. The truth is, it’s very possible to create a quick and simple meal, and you don’t have to be a whiz in the kitchen to accomplish it. Here are some of my favorite recipes for when I don’t have time to cook or need to take something to go.
