Vegans don’t always eat salads, but when we do, we go all out: no limp iceberg lettuce or stale carrot shreds. We fill our bowls with mounds of vegetables, fruits, grains, legumes, nuts, and sometimes lettuce. Dressings range from thick and creamy to light and tangy. Some salads are cold, some are warm, and some are both! Occasionally, our salads are appetizers, but when they’re done right—like the ones in this chapter—they’re the main event.
