I love being a chef. The learning is constant, we get to talk about, prepare and eat food all day, and even better we gain incredible skills, skills that I can’t wait to teach my daughter. Having the knowledge to prepare fish and animals from start to finish is wonderful, and it gives you the tools to reduce waste and use as much of the produce as possible.
In this section I’ve covered some basic skills to help you prepare game and shellfish and fillet a fish, as well as a few other cooking basics like salting, smoking, poaching and toasting.
