Often known as ‘the land of 10,000 lakes’, the soil in Minnesota is full of nutrients and mineral elements that give the cheeses their richness and depth of flavour. The land in Iowa is generally flat, although there are several natural lakes that give rise to good soil conditions and drainage. Illinois and Michigan both have fertile land and agricultural traditions, although cheesemaking is still a small production.
