Fine dining chefs and Michelin stars may get all the attention but they are not the only paths a chef can take. With the breakdown in chef training post college the value of a skill has risen by the same amount.
Where chefs would once have gone to a hotel like The Savoy or Grosvenor House for training - where there were butchery, fishmongery and bakery departments in-house - it is harder than ever to learn these skills by any other route than going to work directly for an artisan.
