If you do purchase a frozen turkey, transfer it from the freezer to the refrigerator to thaw, allowing 24 hours for every 5 pounds (2.3 kg). Then, remove the bird from the refrigerator 2 hours before it goes into the oven (if your Christmas is in summertime and your kitchen is warm, leave the bird at room temperature for less time). Here are cook and rest times that will result in a perfectly roasted turkey.

  • 9-11 pounds (4-5 kg): 2½ hours cook time, 1½ hours rest time
  • 11-13 pounds (5-6 kg): 2½-3 hours cook time, 1½ hours rest time
  • 13-15½ pounds (6-7 kg): 3-3½ hours cook time, 1 hours rest time
  • 15½-17½ pounds (7-8 kg): 3½-4 hours cook time, 2 hours rest time
  • 17½-20 pounds (8-9 kg): 4-4½ hours cook time, 2 hours rest time
