One thing about opening and running restaurants is that you never fall into a comfortable or boring routine (depending on how you look at it). Opening them is always exciting because you are sustained by a vision of restaurant perfection, all the obstacles en route merely the steps necessary to the realization of this vision: an efficient machine for turning base metals into gold, for generating delight and well-being in the customer, for pleasurably oiling the wheels of commerce, and for lining the pockets of the owner (hang on – how did that get in?).
