Refreshing Bean Curd

Chinese bean curd cakes are sold in lidded plastic boxes (usually 2 to 4 cakes per box), containing water inside. To refresh the bean curd, drain off the water, rinse the bean curd with cold water, then steep it in warm or hot water for 15–30 minutes. Drain thoroughly.
