In Mexico, like many other countries, main dishes usually aren’t accompanied by carbohydrate or vegetable sides to make them a complete meal. Unlike American or French plating, Mexican main dishes like tamales or birria, a slow-braised beef dish, can stand on their own and don’t need any sides. I have included many of these types of recipes in this chapter to share a true taste of Mexico. I wanted to show you why I couldn’t back down from the amazing flavors of the Mexican kitchen during my time in the MasterChef kitchen.
