Although pork is the most popular meat for salting, other meats can also be used. In Russia, bear hams are cured exactly like pork hams. In many parts of the world, salt mutton is popular. In almost all cases, it’s best to get the meat dressed and chilled as soon as possible, then apply salt as soon as the meat is chilled.
Although opossums, rabbits, and other small animals and game can be salt-cured, it is usually larger animals and larger cuts of meat that are preserved.
