Corned beef is quite rich, so that a quarter pound will be a sufficient serving for a person of normal appetite. Most of these recipes call for cooking a 4- to 6-pound chunk of meat, which is more than enough for the average family of today. Leftovers can be sliced for sandwiches or used in hash.
